The Onizaki Tradition Passed Down for More Than 62 Years

Onizaki's Crushed Sesame has a reputation for being tastier than the ground sesame made at home, and there is a reason for this. Crushed Sesame involves production processes which, while simple, are time-consuming, such as careful selection and roasting. Onizaki is a specialized manufacturer and so it handles an enormous amount of sesame – far more than is ever seen in the home. This means we are able to put a lot more time and effort into each process compared to what is possible at home. We can not only acquire basic ingredients suitable for Crushed Sesame from all over the world, but also do extra work which is difficult to do at home, such as slowly roasting the sesame and crushing it gradually with mortar and pestle. This is what produces the distinct texture of our sesame.

Careful SelectionWe exercise extreme care to ensure the reliable quality of our basic ingredients.
In order to have customers enjoy a tasty and safe product, we exercise extreme care to ensure the quality of our products' raw ingredients. Onizaki staff themselves confirm the quality (taste, safety, absence of extraneous materials) of the raw ingredient - sesame - and carefully select high-quality raw ingredients after collecting information on their place of origin. Raw ingredients delivered to the factory are immediately put through the selection line. Impurities or extraneous materials are thoroughly removed from the sesame using several machines. The sesame is then carefully washed and allowed to absorb the right amount of water. This process, which precedes the roasting process, is a very important step that determines the tastiness of our Crushed Sesame.

  Fragrance and taste are vital to sesame. The process that determines the fragrance is roasting. Onizaki uses a unique roasting machine, which we have developed ourselves, to fully bring out the sesame's fragrance. Depending on the place of origin or type of raw ingredient, we taste samples time and time again and fine-tune the processing method so we can always produce the best product. One to three types of roasted sesame are then blended into one product. The ratio is determined each time by staff after tasting the product.

The sesame is blended according to the ratio decided during the roasting stage and once again put through equipment that removes extraneous materials. Next is the crushing process. The sesame is carefully pounded with mortar and pestle to produce Onizaki's unique Crushed Sesame with its distinctively moist texture. In order not to lose the taste and fragrance, we package it immediately. We prevent the loss of flavor with aluminum packaging, which keeps out both light and oxygen. Finally, packaged products are closely checked, as necessary, to see if the inside content is sufficient in weight and whether there are any extraneous materials that have been mixed in. After dedicating all this time and effort, we can deliver our Crushed Sesame into the hands of our customers.
