Chapter 4: The Original Manufacturers of Crushed Sesame

In May 2010, 39 years after the time when the "pestle pounding machine" was built in 1971, Onizaki made a big decision. We changed the name of the product from the familiar Ground Sesame to Crushed Sesame.

Traditionally, sesame ground using an earthenware mortar is referred to as "ground sesame" but it seemed unreasonable to call Onizaki's sesame product, which is pounded with a pestle and mortar through Onizaki's original processing method, "Ground Sesame." Furthermore, we were very uneasy with the category "ground sesame" because the moist look, flavor and texture of sesame ground using an earthenware mortar differs greatly from that of a pestle-processed sesame product.

In many of the ground sesame products, the amount of oil exuded is small and the sesame looks dry. These products can be said to be inferior to Crushed Sesame in terms of flavor and texture. In contrast, by pounding sesame grains using a pestle, Crushed Sesame exudes just the right amount of sesame oil and other tasty components, which is why it is superior in flavor and texture.

In order to clarify these differences in quality and to promote our product as "tasty sesame" which is a grade higher than many other "ground sesame" products, we changed the name to Crushed Sesame in 2010. Furthermore, this name is truer to the actual processing method. In addition to being the original manufacturer of tasty sesame products, as the originator of this new product category, we will strive to let Crushed Sesame take its place alongside the three big categories of ground sesame, roasted sesame and sesame paste.
