Black Sesame Udon Noodles
Firm texture and smooth feeling when swallowing of hand-stretched noodles
These new udon noodles of the dried type are made by mixing Onizaki's Roasted Sesame (Black) and Sesame Paste with udon noodles made from the special 400 year old technique of hand-stretching noodles from Shodoshima Island.

From the Keicho ear some 400 years ago, the people of Shodoshima Island have been developing their noodle making skills and passing the traditional hand-stretching method on through generations.

Professional noodle makers first check the temperature and humidity, which affect the noodle making, and then decide on the day's salt use and amount of water to be used. The finished udon noodles are then left to sit for two days. This develops the strong chewiness which is characteristic of hand-stretched noodles. The Black Sesame Udon Noodles have a smooth feel to them when they are swallowed and the sesame flavor and texture are fresh. They can also be used in steamboat dishes or as a substitute for the noodles in yakisoba.
